Tiramisu au citron

Comme de nombreux autres desserts aujourd’hui, le tiramisu a lui aussi diverses déclinaisons. Si vous aimez la version au café, vous ne pourrez que craquer pour la version au citron. J’utilise une liqueur Italienne pour relever subtilement le goût du citron. Le Limoncello est une liqueur extrêmement parfumée à base d’écorces de citrons. Depuis que les pouvoirs publiques ont interdit la vente de l’alcool à 90°C en pharmacie, la production artisanale du Limoncello est plus compliquée et surtout beaucoup plus chère.

Le plus compliqué à trouver pour cette recette, ce sont des citrons BIO. Là, on ne plaisante pas 👿 . Si vous ne voulez pas vous trompez, vous devez prendre des citrons estampillés IGP. En France, à par ceux de Menton, je n’en connais pas d’autres. Les Italiens sont beaucoup plus forts, ils en ont 6. J’imagine que le climat joue en leur faveur. Un petit clin d’œil à mes ami(e)s Portugais(es), il existe un citron Portugais, autrefois appelé « citron de Madère ».

Celui que l’on retrouve le plus souvent en grande surface est appelé citron Eureka. Hors bassin méditerranéen, l’Eureka est la variété de citron la plus répandue dans le monde. Vous pourrez le trouver toute l’année, en provenance d’Australie, d’Afrique du Sud, d’Argentine, de Californie et d’Israël.

J’ai réalisé plusieurs essais et utiliser ma famille comme cobaye avant de vous proposer ma recette. Je n’ai rien inventé, je suis reparti de la recette original et remplacé le café par du jus de citron et de la liqueur de Limoncello à la place de l’Amaretto. J’ai ajouté quelques notes de zestes à la préparation pour maintenir un niveau d’acidité subtilement présent en bouche. Tout le monde a survécu au crash test, je peux donc vous dévoiler la recette du tiramisu au citron.

Cette recette est réalisée avec des biscuits à la cuillère maison. La recette est ici. Si vous n’avez pas le temps ou le courage de les faire, prenez des biscuits à la cuillère de qualité (avec beaucoup d’œufs). Si vous avez des personnes intolérantes au gluten, vous ne pourrez pas y échapper.

Il faut compter environ 40 minutes de préparation pour réaliser ce merveilleux dessert riche et exaltant. Les biscuits à la cuillère sont déjà prêts. Je vous conseille de les faire la vieille et de les entreposer dans une boîte métallique.

Ustensiles nécessaires pour cette recette :
→ 1 robot pâtissier avec le fouet  (pour les jaunes)
→ 1 batteur électrique (pour la crème fouettée)
→ 1 presse agrumes
→ 1 petite casserole (pour préparer le jus de citron au Limoncello)
→ 1 petite casserole (pour le sirop à ajouter aux jaunes)
→ 1 petit cul de poule pour récupérer les zestes de citron
→ Une maryse
→ 1 grand cul de poule
→ 1 plat à gratin (idéalement 20 x 20 x 7) ou des verrines à desserts
→ 1 petit plat ovale Pyrex (pour tremper les biscuits à la cuillère)
→ 1 thermomètre culinaire (vous retrouverez sa fiche technique dans l’onglet « Ustensiles »)
→ 1 balance de précision (vous retrouverez sa fiche technique dans l’onglet « Ustensiles »)
→ 1 râpe

Les quantités de cette recette sont pour 10 personnes.

Ingrédients pour la mousse tiramisu :
→ 375gr de mascarpone
→ 135gr de sucre semoule
→ 100 gr de jaune d’œufs (5 œufs)
→ 5gr de gélatine (en poudre ou 2 feuilles et demie)
→ 60gr d’eau (minérale de préférence)
→ 4 citrons jaunes
→ 2 citrons verts
→ 1 gousse de vanille
→ 450gr de crème fleurette 30% MG
Ingrédients pour le sirop au citron :
→ 180gr de jus de citron
→ 50gr de liqueur Limoncello
→ 60gr de sucre semoule

Etapes de préparation :
Avant de commencer, lisez toutes les étapes au moins une fois et préparez tous vos ingrédients.

Commencer par récupérer les zestes de citron avant de réaliser le sirop au citron.
Le sirop doit être froid au moment de tremper les biscuits.

Avec une râpe, récupérer le zeste de deux citrons jaunes et deux citrons verts. Réserver.

Pour le sirop au citron, verser le jus de citron (180gr) puis le sucre (60gr) dans une petite casserole et faire bouillir jusqu’à obtenir une petite ébullition. Retirer du feu et verser le Limoncello (50gr). Transvaser le sirop dans le plat Pyrex.

Préparation de la mousse tiramisu :
Commencer par hydrater la gélatine (5gr). Personnellement, je préfère la gélatine en poudre. Vous en trouverez en grande surface.

Panna Cotta Karimton

Dans un verre, verser la gélatine (5gr) puis ajouter 2 cuillères à soupe d’eau froide. Une balance de précision s’impose pour de si petites quantités. Si vous ne la possédez pas, allez faire un petite tour dans la liste des ‘Ustensiles‘. Vous avez un lien direct chez Amazon, cela vous donnera une idée de prix.
Mélanger puis réserver. Je laisse toujours la cuillère avec la gélatine, cela permet de tout soulever lorsqu’elle est prête.

Verser l’eau (60gr) puis le sucre (135gr) et laisser le sucre s’imbiber correctement (environ 2 minutes). Sur la photo, il ne l’est pas encore.

En attendant, dans le bol du robot pâtissier, verser les jaunes d’œufs (100 gr) et les graines de la gousse de vanille. Fouetter à pleine vitesse le temps de préparer le sirop. Si vous n’avez pas de robot pâtissier, le faire avec un batteur électrique.

Une fois le sucre correctement imbibé, mettre la casserole sur feu moyen et laisser le sirop bouillir jusqu’à atteindre 116°C.
Avant de verser le sirop sur les jaunes :
→ Passer le robot en vitesse 1
→ Verser la gélatine hydratée sur les jaunes et laisser tourner 10 secondes
→ Augmenter légèrement la vitesse du robot et verser le sirop chaud en filet, attention aux projections 😳
→ Augmenter la vitesse du robot au maximum de sa puissance et laisser tourner jusqu’à complet refroidissement. Il faut compter environ 5 minutes.
Le mélange doit devenir crémeux. Réserver.

Tiramisu Karimton

Arrêter le robot, ajouter le mascarpone (375gr) et fouetter de nouveau pendant 1 minute à vitesse moyenne. Le mélange doit être volumineux et aéré. Vous pouvez, d’ores et déjà, goûter la mousse 😛 . Réserver.

Dans un autre bol du robot pâtissier, verser la crème fleurette 35% MG (450gr) et commencer à fouetter en augmentant progressivement jusqu’à atteindre la vitesse maximum. Il faut compter environ 3 minutes. Si vous n’avez pas de second bol, transvaser la mousse dans un grand cul de poule et réutiliser le même bol après l’avoir lavé et essuyé.

Ajouter la moitié des zestes des citrons jaunes et verts puis la crème fouettée à la mousse. La technique consiste, avec la maryse, à soulever la masse du centre vers le fond puis remonter avec un mouvement rotatif du poignet sans oublier de faire tourner le bol pâtissier au fur et à mesure.

Montage du tiramisu pour un découpage à la part :
→ Commencer par imbiber chaque biscuits avec le sirop au citron avant de les déposer dans le fond du plat. Il n’est pas utile d’imbiber les biscuits sur les deux faces. Il faut avoir un biscuit juste assez humide mais pas trempé. La crème se chargera d’imbiber l’autre face durant toute la nuit.
→ Recouvrir complètement les biscuits avec la crème tiramisu. Il n’existe pas de quantité idéale, il faut au minimum avoir au moins 1,5 cm d’épaisseur.
→ Recommencer l’opération, une couche de biscuits juste imbibée et la dernière couche de crème tiramisu.
→ Pour finir, saupoudrer de zestes jaunes et verts.

Montage du tiramisu en verrines dessert : Couper les biscuits en deux, imbiber chaque demi biscuits avec le sirop au citron avant de déposer trois demi biscuits dans le fond de la verrine. Ajouter 2 cuillères à soupe de crème tiramisu. Tapoter la verrine dans le creux de votre main pour égaliser et aplanir la crème tiramisu. Ajouter un peu de cacao.
Recommencer l’opération une fois de plus. Ensuite vous pouvez choisir de saupoudrer de zestes de citrons jaunes et verts ou attendre de le faire juste avant de servir.

Mettre au frais 24 heures avant de servir.

Informations utiles :
→ Prenez des citrons frais et BIO de préférence. Si vous ne pouvez pas vous en procurez, mettez vos citrons à tremper avec du vinaigre blanc pour les nettoyer pendant 30 minutes. A défaut, prenez du jus de citron BIO prêt à l’emploi.
→ Si vous ne disposez pas d’un robot pâtissier ou d’un batteur électrique, cela risque d’être beaucoup trop compliqué. Je vous suggère d’investir au minimum dans un batteur électrique.
→ Pour plus de simplicité, utilisez le batteur pour les jaunes et le robot pour la crème fouettée.
→ Le temps de pose idéal est de 24 heures. Préparez le dessert la veille.
→ Les jaunes sont cuits, vous pouvez conserver le gâteau 48 heures sans aucun souci.
→ Ne mettez pas trop de zeste de citrons, il risque de prendre le dessus sur le reste.
→ Vous pouvez mettre des spéculos à la place des biscuits à la cuillère. Si c’est le cas, laissez les spéculos s’imbiber toute une nuit.

    Sie verbietet außerdem Stoffe in Tätowiermitteln,
    die schon in Kosmetika beschränkt sind. 19 Farben werden verboten, weil sie auch für Kosmetik verboten sind.
    Alle Farben, in denen eine der etwa 4200 beschränkten Chemikalien enthalten ist,
    dürfen nicht mehr auf dem Markt sein. Besondere Aufmerksamkeit gibt es für die Farben Grün und Blau.
    Genauer gesagt geht es um den blauen Phthalocyanin-Farbstoff (Pigment Blue 15:3) und den grünen Phthalocyanin-Farbstoff
    (Pigment Green 7). Nicht nur bei diesen beiden gibt
    es nicht genug Informationen über ihre Gefahreneigenschaften und über das Gesundheitsrisiko.

    Aus Thermopapier bestehende Kassenbelege, sollten ebenfalls dunkel
    und kühl lagern. So sollten die Belege nicht in Taschen, Klarsichtfolien, oder Geldbörsen deponiert sein. Der Kontakt der Belege zu Kunststoffen, Lösungsmitteln,
    Ölen und Fetten beeinflusst das Druckbild durch
    Verblassen bis hin zur Unlesbarkeit. Die richtige Lagerung ist
    gerade für den Kunden sehr wichtig, denn ist
    die Schrift eines Kassenbons mit Thermodruck verblasst, könnte es im Garantiefall, beim Umtausch, oder bei der
    Rückgabe von Waren schwierig werden. Thermopapier sollte grundsätzlich
    nicht dem direkten Sonnenlicht, sowie keiner großen Hitze ausgesetzt werden. Was passiert bei falscher
    Lagerung der Kassenbons aus Thermopapier? Diverse chemische Stoffe verfügen aber auch über Eigenschaften,
    die das Thermopapier angreifen. Besonders bei der Einwirkung von Wärme
    verblasst der Aufdruck auf Belegen aus Thermopapier. Klebstoffe so auch lösen Thermopapier auf.

    Ebenso an der Zeit sein vermeiden, die Kassenbons
    aus Thermopapier in Klarsichthüllen zu lagern. Selbst auf die Gerbstoffe in unserem Lederportemonnaie können Quittungen aus Thermopapier reagieren.
    Deshalb ist auch dieses für eine dauerhafte Lagerung von Thermopapierbelegen ungeeignet.
