Rochers à la noix de coco
J’ai tellement de blanc d’œufs par semaine, que je recherche sans cesse des recettes pour ne pas les jeter. Quelques fois, je finis par en congeler une partie. J’ai toujours un bol, au-dessus de mes meubles de cuisine, remplit de blanc d’œufs. Ils servent majoritairement à la confection de macarons, de meringues, de financiers, de rochers à la noix de coco, d’amaretti ou d’îles flottantes. Les idées de recettes ne manquent pas, c’est le temps qui manque.
Cette fois, je vous propose d’utiliser une partie de vos blancs d’œufs pour réaliser des rochers à la noix de coco.
Anciennement appelés « Macarons des sœurs », on se demande encore aujourd’hui pourquoi ce petit biscuit porte deux noms différents. Certains le nomment « congolais » alors que d’autres l’appellent « rochers à la noix de coco ». Après quelques recherches, j’ai péniblement trouvé un semblant d’explication. Congolais pour le Congo et rochers à la noix de coco pour les Antilles. Je vous l’accorde, c’est très léger. Sinon, il semblerait que la vraie différence se situe au niveau des ingrédients et de la méthode de cuisson.
Les rochers se fabriquent en quantité égale de sucre et noix de coco et la moitié du poids de sucre en blanc d’œufs. Il doit être cuit comme une meringue, à basse température. Il doit rester totalement blanc mais croustillant.
Pour le congolais, on oublie les blancs d’œufs, on utilise uniquement les jaunes. La cuisson s’effectue à 220°C pendant 8 minutes.
Cette recette m’a été donné par une amie Antillaise. Personnellement, je n’ai pas envie de la changer car j’adore cette recette.
C’est une recette que vous pouvez faire avec vos enfants. Ne croyez pas que vous résisterez toute une vie derrière les fourneaux. Il faut, d’ores et déjà, initier vos enfants à prendre le relais. Je compte bien profiter de mes vieux jours avec de bons petits plats assis sur mon rockincher 😎 .
Il faut compter environ 10 minutes de préparation et 20 minutes de cuisson au four pour réaliser ce plat. Contrairement à la publication faite sur Facebook, j’ai volontairement changer l’ordre des ingrédients pour obtenir une pâte moins collante et donc plus facile à travailler.
Ustensiles nécessaires pour cette recette :
→ 1 grand cul de poule
→ 1 petite casserole à fond épais
→ 1 spatule en bois
→ 1 plaque à pâtisserie perforée
→ Papier sulfurisé
Ingrédients :
→ 60gr de blanc d’œufs (2 œufs)
→ 80gr de sucre semoule (pas de sucre fin)
→ 140gr de noix de coco en poudre (fraîche, c’est encore mieux)
→ 50gr de beurre
Etapes de préparation :
Avant de commencer, lisez toutes les étapes au moins une fois et préparez tous vos ingrédients.
Préchauffer le four à 175°C chaleur tournante.
Dans une petite casserole à fond épais, commencer par faire fondre le beurre (50gr) à feu très doux. Réserver.
Dans un cul de poule, verser la noix de coco (140gr) puis le beurre fondu. Mélanger intimement.
Ajouter les blancs d’œufs (60gr). Mélanger.
Ajouter le sucre (80gr) puis mélanger. Vous devez obtenir une pâte compacte et légèrement collante.
Pour la confection, utiliser soit un ustensile selon la forme que vous désirez donner à vos rochers soit les façonner entres vos mains.
Enfourner pour 20 minutes à mi-hauteur. Surveillez la cuisson.
Tourner la plaque à mi-cuisson pour avoir une cuisson uniforme.
Décoller délicatement les rochers à la noix de coco avant de les déposer sur une plaque de refroidissement.
Informations utiles :
→ Attention, à la sortie du four les rochers à la noix de coco sont très fragiles. Utiliser une spatule pour les déposer sur une plaque de refroidissement.
→ Adapter le temps de cuisson en fonction de la taille des rochers. En règle générale, lorsque les bords et la pointe sont dorées vous pouvez stopper la cuisson.
→ Vous pouvez les conserver une semaine sans souci dans une boîte métallique. Avec le temps, ils sèchent et deviennent légèrement croquant. Personnellement, j’aime bien.
→ Pour changer, vous pouvez ajouter un coulis de chocolat au lait.
→ Vous pouvez ajouter un ou deux sachets de sucre vanillé. Diminuer d’autant la quantité de sucre blanc.

Today, I went to the beachfront with my children.
I found a sea shell and gave it to my 4 year old daughter and said « You can hear the ocean if you put this to your ear. » She placed
the shell to her ear and screamed. There was a hermit crab inside and it pinched her ear.
