Cake ultra moelleux aux 2 chocolats et Philadelphia

Encore un cake au chocolat et qui plus est, il est ultra moelleux et pas du tout agressif en chocolat. Ce n’est pas le premier et ce ne sera certainement pas le dernier. Je pensais avoir fait le tour des différentes techniques mais c’était sans compter avec l’ingrédient surprise ‘le Philadelphia’.

Sans surprise, la structure est parfaite, elle est vraiment très moelleuse et souple. En apparence, la texture n’apparaît pas très aérée mais en bouche vous serez surpris par sa légèreté.

Pour garantir un moelleux et une longue conservation, vous devez respecter certaines règles :

→ Utiliser des œufs à température ambiante « Ne mettez jamais les œufs au frais » .
→ N’abusez pas de la levure chimique, respecter le dosage au gramme près.
→ Utiliser du beurre à température ambiante.
→ Pour avoir une croûte très fine sur le dessus, lisser le dessus avec une maryse passée sous l’eau froide.
→ Utiliser une farine T55 de préférence, moins d’élasticité et moins de gluten.
→ Utiliser de préférence du sucre glace, il est beaucoup plus fin que le sucre semoule. Il permet d’obtenir une texture plus lisse et comme les cristaux sont beaucoup plus fin que le sucre semoule, cela évite au cake de trop foncé pendant la cuisson.
→ Pour empêcher la formation d’une croûte trop rapidement, on baisse la température de cuisson à 160°C chaleur tournante.
→ Utiliser un sirop de punchage dès la sorti du four, le cake n’en sera que plus moelleux.

Vous remarquerez que pour ce cake, je n’ai pas appliqué toutes ces règles mais le résultat est bien au rendez-vous malgré le peu de beurre utilisé dans la recette.

Il faut compter environ 20 minutes de préparation et 50 minutes de cuisson pour réaliser ce merveilleux cake.

Ustensiles nécessaires pour cette recette :
→ 1 robot avec le fouet
→ 1 grand bol pâtissier
→ 1 casserole moyenne pour faire fondre les chocolats
→ 1 grand cul de poule
→ 1 maryse
→ 1 moule à cake  (26x10x8 (Longueur, Largeur, Hauteur))
→ Film étirable alimentaire
→ 1 grille de refroidissement
→ 1 petite casserole pour préparer le sirop de punchage
→ 1 pinceau culinaire
Ingrédients : Tous les ingrédients de cette recette doivent être à  température ambiante.
→ 100g de chocolat noir
→ 100g de chocolat au lait
→ 50g de praliné amandes/noisettes
→ 100g de lait
→ 2 œufs
→ 150g de Philadelphia
→ 30g de cacao non sucré
→ 130g de cassonade
→ 50g de beurre pommade
→ 100g de farine
→ 5g de levure chimique
Ingrédients pour le sirop de punchage :
→ 100g d’eau
→ 50g de sucre semoule
→ 1/2 gousse de vanille (facultatif)

Etapes de préparation :
Avant de commencer, lisez toutes les étapes au moins une fois et préparer tous vos ingrédients.

Le sirop de punchage :
Mettre à bouillir l’eau (100g) et le sucre (50g) dans une petite casserole. Ne pas dépasser 105°C, le sirop doit rester clair.
Hors du feu, ajouter la demi-gousse de vanille et laissez infuser. Utiliser le sirop froid ou légèrement tiède.

The cake Karimton

Beurrer généreusement le moule à cake et réserver au frais.
Dans une casserole à fond épais, faire fondre (idéalement au bain-marie) le chocolat noir (100g), le chocolat au lait (1000g), le praliné amandes/noisettes (50g) avec le lait (100g). Dans le cas contraire, pour éviter de brûler les chocolats ou qu’ils n’accrochent dans le fond de la casserole, le faire à feux doux en remuant régulièrement.

Dans le bol d’un robot, fouettez le beurre mou (50g) et la cassonade (130g) pendant 2 minutes. Compte tenu du temps, il est très difficile d’avoir un beurre pommade ou suffisamment mou, n’hésitez pas fouetter le beurre avec le sucre plus longtemps.

Ajouter le Philadelphia (150g) et continuer de fouetter pendant 1 minute. N’hésitez pas à racler les bords avec une maryse pour décoller la préparation des parois du bol du robot et continuer de fouetter.

Ajouter les œufs (2) préalablement battus et continuer de battre pendant 1 minute.

Ajouter les chocolats fondus et continuer de battre pendant 2 minutes.

Transvaser la préparation dans un grand cul de poule pour pouvoir incorporer plus facilement la farine.
Ajouter la farine ((100g), le cacao (30g) et la levure (5g) tamisée délicatement à la maryse.

Verser la préparation dans le moule à cake généreusement beurré.
Lisser la préparation avec une maryse passer sous l’eau froide puis entreposer 2 heures au frais.

Préchauffez le four à 180°c puis enfourner pour 50 à 55 minutes environ.
Le cake va gonfler petit à petit, ne vous inquiétez pas c’est normal. La progression est lente.
Contrôlez la cuisson avec la pointe d’un couteau qui doit ressortir sèche.
Sortez le cake du four et le laisser tiédir 15 minutes avant de le démouler et le poser sur une grille de refroidissement. Attention, il est très fragile.
Puncher le cake avec le sirop.

Si vous ne comptez pas le manger tout de suite, le filmer avec du film alimentaire et le mettre au frais.
Avant de le dévorer, sortir le cake au moins 1 heure à l’avance.

Informations utiles :
→ Vous pouvez remplacé la farine T55 par de la maïzena.
→ Ajuster le temps de cuisson en fonction de la taille du moule à cake. Vérifier toujours avec un couteau.
→  Si vous souhaitez un cake avec une légère croûte, laissez-le refroidir pendant 1 heure puis filmez-le avant de le mettre au frais.
→ Réserver votre cake au frais afin d’empêcher la levure chimique de se développer et assurer une pousse harmonieuse. En règle général, 2 heures au frais suffisent avant de l’enfourner.
→ Utilisez de préférence un moule en inox.  C’est un excellent conducteur de chaleur qui permet de cuire les gâteaux à la perfection. Ils permettent d’obtenir de belles croûtes dorées et bien croustillantes.
→ La quantité de pâte dans le moule ne doit pas dépasser les ¾ du moule car le cake va lever lors de la cuisson.
→ Le miel a la particularité d’apporter du moelleux aux cakes en retenant l’humidité, ce qui permet aussi une meilleure conservation. Vous pouvez donc remplacer une partie du sucre par du miel d’acacia. Attention, Le miel a un pouvoir sucrant 1,3 fois supérieur à celui du sucre. Ne le faites que si vous envisagez une conservation plus longue.
→ Si vous choisissez de faire des muffins, le temps de cuisson est environ de 25 minutes.
→ Le temps de repos idéal est une nuit au frais emballé avec du film alimentaire. Il faut le sortir au moins 1 heure avant de le manger.
